The Magical Accident That Created the World’s Healthiest Snack

Let me tell you a story and make you time travel back to the 1750s. It’s late at night, moonlight making the wetlands of Madhubhani shine. The local fisherman, with their woven baskets make their way to the moonlit ponds, to find tiny black pearls. Little did they know that one day these pearls would make their way to the biggest kitchens of the world. 

The Mythical Origins

Greek mythology actually tells us a story that goes back more in time. Ancient storytellers whispered of three terrifying sisters- Stheno, Euryale, and the infamous Medusa(whose hair has venomous serpents). The term Euryale ferox, which is the scientific name of popped water lily seeds, actually emerged from the fearsome tale. But here's the interesting part: Euryale was considered the most dangerous of the three sisters. She was known as "the wide-leaping one" and unlike Medusa, she was immortal and could never be killed.

So why would scientists name such a nourishing, healthy plant after such a terrifying creature? Well, if you've ever seen the water lily plant in its natural habitat, you'd understand! The plant itself is quite fierce-looking with sharp, thorny stems and spiky seed pods that can cut anyone who tries to harvest them carelessly. It's amazing how something from such a frightening mythological story became one of the world's most loved healthy foods. 

Bihar: The Home of Water Lily Seeds

Did you know that Bihar makes up to 90% of the world’s popped water lily seeds! Just to think about the same is wild, but this did not happen by an accident. For over 200 years, the farmers from the Mallah community have practiced the art of harvesting these seeds. It’s safe to say that it requires a lot of practice, patience and skills. Because getting these seeds wasn’t easy. Fishermen had to dive into the ponds that were filled with sticky mud and at the same time there were thorns everywhere. The plants had spikes which even used to cut their skin multiple times, but they did not stop or make excuses because they knew how special these seeds were. 

The Amazing Discovery

This is actually my favorite part of the story. Apparently, no one planned to discover that these seeds could actually pop. They say figuring this out happened by accident. A fisherman’s wife had kept the black seeds that his husband had bought very close to the fire while she was cooking him food. When the heat intensified over time, these black seeds popped into magical white puffs.

Wonderful isn’t it? It was a beautiful accident which changed everything, overtime it became more than just food. The value of these seeds were also high. People used it as money, medicine and as gifts to gods. Different religions started using them for various purposes. Hindus made garlands with them for temples. Muslims used to eat them as the first thing to break their fasts after Ramadhan. 

Going Global

History speaks for itself. These seeds have been considered magical with supernatural powers. People have been eating water popped lily seeds for thousands of years now. Ancient Chinese people consumed them, because they knew how good these were for their health. But the credit goes to the farmers in Bihar and the accident which helped them figure out how to pop the water lily seeds. Since then these seeds have been traded, and they have travelled to a lot of places. Like Pakistan, Canada, Malaysia, Bangladesh and much more. 

Today, Madhubhani trades over 3500 tons every year. This is nothing short of impressive, and the Indian Government has acknowledged the same and has given it a geographical indication tag. What this means is that the world recognizes Bihar as the true home of popped water lily seeds. 

The Story Continues

With traditional cooking methods they have modern machines working side by side. The tradition, the values have been passed down from generation to generation.
